It seems like it takes forever for winter to be over, as you dream about fresh veggies from your garden.
Then BAM! Summer is here and you have a bountiful abundance of veggies.
We eat fresh veggies from our garden every day, but there is always a larger harvest than we can eat. I don't can, but I do freeze my extra veggies. It is very simple to do.
Bring a large pot of water to boil. Plunge in fresh green beans and boil for 3 minutes.
Immediately plunge them into a large bowl of ice water and let set for 3 more minutes.
Drain on a kitchen towel and then place in a freezer bag. Label and date and throw into the freezer. This winter, you can pull them out and boil for a few minutes, top with butter and pine nuts and remember how lovely summer was.
